Coconut Water Kefir
This fermented drink helps improve digestion and is particularly recommended with or after food.
Ingredients
Water kefir grains, ¼ cup
Fresh coconut water, 6 cups
Lemon or orange juice, ½ to 1 cup
Method
Pour the coconut water and water kefir grains in a jar. Cover the mixture with a cheesecloth and let it sit for up to 2 days at room temperature. Strain the kefir and coconut water and reserve the grains. Another fermentation will turn the coconut water kefir fizzy. Mix juice and coconut kefir and pour into a tightly sealed bottle. Let it ferment for up to 48 hours, then tore in the refrigerator!
