Turmeric rice bowl with chickpeas and vegetables

- 1 ¼ cups water
- ½ cup brown basmati rice
- 1 teaspoon extra-virgin olive oil
- 1 teaspoon freshly grated turmeric or ½ teaspoon ground turmeric
- 1 teaspoon garlic powder or onion powder
- 1 can rinsed and patted dry chickpeas
- 1 cup roasted root vegetables
Method
- For the preparation of rice, combine olive oil, onion or garlic powder, water, turmeric, salt, and pepper of your choice by bringing it to a boil. Cover the rice and cook until there is complete absorption of the liquid.
- Meanwhile, heat oil in a separate skillet and roast the chickpeas and root vegetables and serve with the rice.
