Slow-Cooker Chorizo Paella & Shrimp
Shrimp and paella chorizo is an iconic dish from Spain which is mighty fulfilling and brings heart healthy benefits.
Ingredients
- 6 ounces Spanish chorizo
- 1 ½ cups yellow onion
- 1 ½ cups brown rice
- 1 cup chopped red bell pepper
- 2 cups unsalted chicken stock
- 1 ½ pounds raw shrimp
- ½ teaspoon ground turmeric
- 1 can fire-roasted tomatoes
- 1 ½ cups frozen sweet peas
Method
- Add chorizo in a non-stick skillet and cook until it’s brown. Remove the chorizo and add the bell pepper and onion in the skillet by cooking it until the vegetables are softened.
- Now add the garlic and rice and toast them for a minute. Stir in the turmeric, stock, tomatoes, salt, and chorizo. Cook by covering on high flame for about 3 hours.
- Add the shrimp and peas and again cook for 15 minutes and serve with parsley garnishing on top.
