Vegetable soup
The vegetable soup is a healthy immunity-booster, vegan meal that can be nourishing for the body yet tastes super delicious. The addition of turmeric adds a gold vibrant color to the vegetable broth making it extra palatable.
Ingredients
Following is the checklist for the ingredients you need:
- 2 cups chopped butternut squash
- ¾ cup sliced parsnips
- 1 cup chopped onion
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon ground turmeric
- 6 cups vegetable broth
- 3 cups chopped rainbow chard
- 1 can stewed tomatoes
- 1 can unsalted chickpeas
Method
- Add oil, onion, parsnips, and squash in a heated pan and cook for about five minutes. Now stir in turmeric, salt, pepper, garlic or ginger to your taste.
- Add tomatoes and broth and let the vegetables get tender for almost 10 minutes. By adding chickpeas and chard, wait for another 2 minutes and serve.
