Ingredients

Following is the checklist for the ingredients you need:

  • 2 cups chopped butternut squash
  • ¾ cup sliced parsnips
  • 1 cup chopped onion
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon ground turmeric
  • 6 cups vegetable broth
  • 3 cups chopped rainbow chard
  • 1 can stewed tomatoes
  • 1 can unsalted chickpeas

Method

  • Add oil, onion, parsnips, and squash in a heated pan and cook for about five minutes. Now stir in turmeric, salt, pepper, garlic or ginger to your taste.
  • Add tomatoes and broth and let the vegetables get tender for almost 10 minutes. By adding chickpeas and chard, wait for another 2 minutes and serve.
